Turkey Manicotti with Cream Sauce

Looking for something to do with all those leftovers? This is a great casserole that can be made ahead and frozen.  You know, in case you didn't spend enough time in the kitchen yesterday.


Turkey Manicotti with Cream Sauce

12 manicotti shells, cooked according to package directions
1 tbs butter
1 tbs flour
1-1/3 cups milk, divided
8 oz cream cheese with chives (the kind in a tub)
1/3 cup parmesan cheese
2-1/2 cups cooked turkey, chopped
5 oz broccoli slaw (purchase in your produce section or julienne your own broccoli)
1/4 tsp black pepper
Paprika


  1. Preheat oven to 350 degrees. In medium saucepan, melt butter and stir flour in until it is well combined. Slowly add one cup of milk. Stir constantly over medium heat until sauce is thickened. Reduce to low. Add cream cheese gradually and stir until smooth. Add parmesan.
  2. In a medium bowl, combine 3/4 cup of the cheese sauce, turkey, broccoli and black pepper. Put filling in zip top bag and snip off the corner. Pipe filling into manicotti shells. Put shells in a baking dish sprayed with non stick spray.
  3. Stir the remaining 1/3 cup of milk into the cheese sauce and pour over pasta. Cover and bake for 30-35 minutes.
