Bagel Sandwiches

I have a confession to make.  Sometimes I get annoyed at my family and their whole we need to eat three times a day ways.  I mean, seriously.  Three times? Every day? And snacks, too. Sometimes I feel like I never leave my kitchen. It seems that the very second I finish cleaning up after one meal, someone is poking around wondering what's next.

So here's an idea. Lollygag (lollygag? did I really just say that?) around making breakfast.  I mean, sure the little Bells need a bowl of cereal or something within thirty seconds of consciousness but Mr. Bell can sometimes be held off with a pot of coffee.  Then around 11:00, pull out these bad boys.  Don't call them lunch or even brunch because then those eaters will be onto you and know you're trying to force them into starvation by skipping a meal.  What I do is still call it breakfast and insist he eat two of them. This sends him into a food coma.  Pull out an early dinner around 4:30 or 5:00 and POW POW, you've eliminated one meal and more importantly in my house, one kitchen cleaning session.  I know.  Genius.  Right here on the interent.  Who would have thought?

Bagel Sandwiches
I like to think of these as my invention but I'm sure I'm not the only one....

Bacon, cooked crisp and drained
Cream cheese
Avocado, sliced
Tomato, sliced and seasoned with salt and pepper
Toasted everything bagels

I don't really need to tell you how to do this, do I?  You do, however, need a bigger picture to really grasp the simple beauty of this sandwich.

  2. Oh no, no I did not. Baking scares me. All the exact measuring, how hot is too hot for the water to activate the yeast.... Nope. Store bought and delicious!
