Cilantro Lime Fish Tacos

Ah the fish taco.... Loved by many I know.   Remember that post about how much I hate mayonnaise?  Well, I'm also not a huge fan of fish.  Any fish.  Especially fish that I have seen alive.  I have a strict rule about that.  I simply will not eat anything that I knew as a living being.  That just freaks me out.   There is a story about a pig that I could tell here but for two reasons I will not:

  1. The story is about a pig and has nothing to do with fish except that it is about a pig that was alive (like a fish) and then dead and served up for dinner (also like a fish).
  2. My stories last week got me into a wee bit of trouble with my mom who sometimes doesn't get my sense of humor - like when my sister and I dressed up as her for her birthday party.  Oh you'd love the pictures of that, but well you can see my predicament, right?
Cilantro Lime Fish Tacos
Recipe by Michelle's Dinner Bell

1 lb tilapia filets
1/4 cup canola oil
1/2 cup cilantro, chopped
2 tbs shallot, minced
2 garlic cloves, minced

Combine the above ingredients in a zip top bag and marinate for 3-4 hours in the refrigerator.  While the fish is marinating, prepare the sauce because it is best when it's had time for the flavors to blend.

Creamy Lime Sauce
1/2 cup reduced fat sour cream
1/2 cup mayonnaise
2 green onions, chopped
1/4 cup cilantro, chopped
1 tbs cumin
1 garlic clove, minced

Now for the tacos....
1 lime
shredded cabbage
cheese
tortillas
salsa

Remove the fish from the marinade and squeeze the lime on the fish.  In a large skillet (or an outdoor grill if you prefer) cook the fish about 4 minutes on each side until the fish flakes easily with a fork.

Heat your tortillas either in a skillet or on the grill and place the fish inside.  Top each taco with cabbage, cheese and taco toppings of your choice.



Now since I don't like fish or mayonnaise, this one needs a really fun drink.  I bring you the Salty Chihuahua.  You've never heard of a Salty Chihuahua?  Of course you haven't because I made it up.  It is kind of like Salty Dog Meets Margarita and Fall in Love Forever.

6 ozs frozen limeade concentrate 
6 ozs tequila 
8 ozs ruby red grapefruit cocktail (like ocean spray)
Purified ice (We don't need to go over the purified ice conversation, right?)
Kosher salt
Limes

Get your glasses ready first.  Slice your lime and use it to moisten the rim of each glass.  Roll the outside of the glass on a saucer of kosher salt.  

Okay, now that your glasses are prepared, fill your blender with ice.  Pour in the limeade, tequila and ruby red grapefruit cocktail.  Blend well.  Add more ice if necessary to get the consistency you want.  Pour carefully into glasses and enjoy!

  3. These were awesome Tacos! Finally a Tilapia recipe we all enjoyed(except Michelle, LOL)! Salty Chihuahua, ha ha ha that's classic! I don't like Tequila but maybe I'll try this.

  4. These look amazing! We had Taco Tuesday too, but I wish I had seen this first! I, quite frankly find all of those stories hilarious! As a matter of fact, my eldest daughter just texted me tonight with her thoughts on comfort food and memories like yours that soothe her when she's lonely for her sisters, mom and dad! Their "cheeky" accounts of happenings in our home have me in tears from laughing so hard. Who doesn't have a fish story? P.S I loved the taco story, and yes, my family used Lawry's taco seasoning too!
