Chicken & Broccoli Rice

This is one of those totally unplanned clean-out-the-refrigerator-because-you're-having-a-dinner-emergency meals.  Do you ever have those?
Maybe you forgot to take something out to thaw or you just couldn't bear the thought of going to the grocery store even though you knew there was nothing to eat.  That happened at my house just yesterday.  It wasn't that I forgot to plan.  I had a perfect plan.  It was just that my husband was out all day and skipped lunch and came home starving at 4:00.  Now when he comes home starving, it truly is an emergency. I mean, hide the kids or he might eat them kind of emergency.  And he can get a bit, well, grouchy when he's hungry. So I had no choice other than to throw out my plan and come up with something new and quick.  I threw him a handful of peanuts and started throwing stuff together and this is what I came up with.

Chicken & Broccoli Rice
Recipe by Michelle's Dinner Bell

1 box Cheddar Broccoli Rice (I used Zatarain's brand)
2 frozen chicken breasts
5-6 ozs broccoli slaw
3 slices pepper jack cheese
fresh baby spinach

Combine ingredients called for on rice box and add chicken breasts.  Cover and bring to a boil.  Reduce to a simmer and cook 20 minutes.  Remove chicken breasts and stir rice.  Slice chicken and put back into pot with broccoli slaw and cook five more minutes.  Stir in cheese.  Serve rice on a bed of baby spinach.  That's IT!  Done.  Easy and no children were harmed in the waiting for this dinner.
