Garlic & Parmesan Roasted Potatoes

This is one of my very favorite roasted potato recipes.  It has now been elevated to the holy grail of foods in this house.  My son, Luke, who eats approximately 5 moderately healthy foods outside of the cracker family actually ate this last night.  Not only did he eat this, he ate most of a green bean (yes I said most of a green bean - don't mock me, this is a huge deal) and requested seconds of pork tenderloin.  Seconds?  Unheard of from this boy unless it is pepperoni pizza or cereal.  Now I must confess that he thought the pork tenderloin was meatloaf and I didn't correct him.  He says he doesn't like meatloaf but Dash eats it in The Incredibles, so this week for some reason it is apparently an acceptable food.  Oh and while I am confessing, he was also offered the bribe of playing with the neighbor's ferrets (yuck!) if he ate his dinner.  Yes, I lie about food and bribe my children.  Bribing with rodents is perhaps a new low, but sometimes you just have to go with what works, right?  Please if I find myself googling how to acquire an illegal-in-California ferret, hunt me down and shoot me as even my bribery must have some limits.

That's right... he ate it!  

Garlic & Parmesan Roasted Potatoes
Recipe by Michelle's Dinner Bell
3 lbs red potatoes, scrubbed and diced
1/2 cup butter, melted
3 cloves garlic, minced
Juice of one lemon
1/2 cup Parmesan cheese, shredded
1/4 cup fresh parsley, chopped

Preheat oven to 400 degrees.  Place potatoes in baking dish.  Combine butter, garlic, lemon juice and cheese and mix well.  Pour over potatoes and stir to coat.  Bake 30 - 40 minutes stirring occasionally.  Sprinkle with parsley and serve.
